Dr. Joel Wallach begins the show discussing the story of George Washington Carver. Explaining how Carver used crop rotations to rejuvinate soils in the south that had been depleted. Too many crops of cotton had been grown depleting the soil. Mr. Carver used his influence to create a market for peanut crops to help replenish the soil.

Doug Winfrey and Dr. Wallach discuss a news article regarding a study from the University of Alabama. Researchers found that supplementing with potassium they could reverse vascular calcification. Also finding withholding potassium could actually cause vascular calcification.
